bara brith, revisited

So I decided to give the Bara Brith another shot last night... this time toasted in the toaster oven, with some butter and cheddar cheese (the way they say to enjoy it).

I have to admit, they weren't wrong! It was so much better this way... the saltiness from the cheddar and butter cut the sweet just enough. And while the toaster oven didn't really "toast" it the way I intended, it did warm it nicely. Much better!

The only other thing I really have to say right now is "Happy May!" I can't believe we're to May already! This year is passing so quickly. Hopefully this friday will pass just as quickly too... I'm ready for a weekend!
